Pumpkin Swordfish

1 - 2 lbs unfrozen swordfish

zest from one lemon

3 cloves of garlic (chopped)

2 sprigs of Rosemary (chopped)

3 Pepperoncini peppers

7oz Unsalted pumpkin seeds

Olive oil

Salt

_____________________________________

Mix all ingredients except pumpkin seeds into a marinade.

Marinate fish for at least 1/2 hour.

Add a small amount of olive oil to sauce pan.

Completely cover bottom of sauce pan with pumpkin seeds.

Heat pumpkin seeds and oil for one or two minutes.

Add fish on top of pumpkin seeds.

Pour marinade over top of fish.

Cook until fish is flakey.
