3 Meat
Chili
1 lb Pork
2 lbs Stew Beef
2 Chorizo Sausage (remove skin)
2 Large Onions (diced)
2 28oz Cans of Diced Tomatoes
4 Garlic Cloves
1 14oz Can of Chunky Vegetable Chicken Soup
12 oz Can of Beer
4 Poblano Peppers (grilled, peeled and diced)
2 tbs Olive Oil
1 tbs Sea Salt
1 tbs Black Pepper
1 tbs Ground Cumin.
1 tbs Chili Pepper
1 tbs Chipotle Hot Sauce (or 1 smoked Ancho Pepper)
1 tbs Cilantro
In large pot, heat Olive oil and brown Chorizo, Pork and Beef.
Add Garlic and 1/2 of Onions, cook for another 5 minutes.
Add Chili pepper, Chipotle Hot Sauce, Cumin - Stir and Cook for another 5
minutes.
Add Chicken Soup, Diced Tomatoes, and Beer - Simmer covered for 2 hours.
While Chili is simmering, Grill Poblano Peppers, let cool - Peel skin and dice.
At 2 hours, add diced Poblano peppers, Salt, Pepper, Cilantro
and second half of Onions.
Simmer for another 30 minute
